3 kilo crushed unsalted Fermented brown soya beans

1 kilo of crushed fried skinless groundnuts

3-kilo sugar

1-kilo salt

3 kilo of blended dried shrimps

10 litres of coconut oil

3 kg of tamarind juice

Cut the dry chilli's and shake off its seeds

Boil the cut chilli's into a big pot until soft.

Run it to a blender like the making of Feroa Kurina.

Blend garlic and shrimps before setting aside.

Hand crush the Fermented soya beans.

Hand crush the skinless groundnuts too.

Start stoking the fire stove with the wok. 2 workers to 1 wok. Add some oil and let it simmer before adding garlic. Fry till fragrance and then dump all ingredients inside before adding oil on top.

Continue stirring until you see volcanic eruptions of chilli from the wok. Keep stoking firewood till the 2nd hour and let the embers slowly cook and dry up the XO Sauce a little.

The whole process would take about 3 hours per wok. Stir to prevent the formation of the crust underneath.

A warehouse would be built half with the exposed ceiling. 15 rocket stoves and 15 woks are utilised. Balance 20 employees to help prepare ingredients and bottled them once left overnight to cool. 30 woks, 2 warehouses, 100 employees.
